Pork & Mushroom Stroganoff

Creamy, comforting, and packed with flavour—this Pork Stroganoff is tender pork, mushrooms, and onions in a rich sauce, perfect over mash or pasta for a cozy weeknight dinner.


Serves: Serves 4-6 , Prep time 5min, cook time 30min

Ingredients:

4 tbsp olive oil

800g pork sizzle steaks

6-8 garlic cloves, crushed/diced

4 tsp mild paprika

600g Red Valley King Oyster mushrooms, sliced

1 large brown onion, halved, sliced

2 tbsp tomato paste

2 tbsp Worcestershire sauce

⅔ cup chicken stock

200g sour cream

Instructions:

  1. Preheat oven to 180°C fan-forced.

  2. Prepare vegetables: In a baking dish, combine 2 tbsp oil, garlic, paprika, mushrooms, onion, salt, and pepper. Rub to coat evenly. Bake for 20 minutes.

  3. Sear pork: While the vegetables bake, heat 2 tbsp oil in a frying pan. Sear pork steaks briefly on both sides (do not overcook). Transfer to a baking dish.

  4. Make the sauce: In a small pot, combine tomato paste, Worcestershire sauce, stock, and sour cream. Whisk well, season to taste, bring to a boil, then simmer for 10 minutes.

  5. Combine and bake: Remove mushrooms from the oven and spread evenly over the pork steaks. Pour the sauce over everything. Return to the oven and bake 10–15 minutes, or until pork is cooked through.

  6. Serve: Enjoy with your choice of mashed potatoes or pasta and greens.
